14 ounces russet potatoes, peeled and cubed (about 2 large potatoes)

2 red onions, roughly chopped

Coarse salt and freshly ground pepper

7 ounces chorizo sausage, casings removed and very thinly sliced

1 clove garlic, crushed

2 tablespoons freshly chopped flat-leaf parsley leaves
