Ingredients for 4 servings

3 cups pumpkin or butternut squash , chunks

3/4 cup pitted prune , halved

Sauce

3 medium onions , grated

1 teaspoon olive oil

1 teaspoon butter

1 cinnamon stick

salt & freshly ground black pepper

2 teaspoons sugar

1/2 cup canned chopped tomato

2 onions , sliced

pita bread or lavash bread, to serve

1 pinch saffron (about 12 threads)

1 cup canned chick-peas , drained and rinsed

Shanks

1 tablespoon butter

1 1/2 kg lamb shanks , sawn into 2 . 5 cm pieces

1 tablespoon ras el hanout spice mix , more to taste
