Ingredients for 6 servings

1 kg pork fillet

1 tablespoon oil

1 tablespoon shaohsing wine or dry sherry

1 tablespoon black bean sauce

2 cloves garlic , minced

GLAZE

2 teaspoons dark soy sauce

1 tablespoon light soy sauce

1/4 teaspoon five-spice powder

1 teaspoon sesame oil

1 tablespoon hoisin sauce

3 slices ginger , 6 mm thick

good pinch pepper

MARINADE

1 teaspoon sugar

1 pinch of chinese red food coloring (I leave this out or use a teaspoon of ordinary food colouring)

1 teaspoon light soy sauce

1 tablespoon golden syrup
