3/4 cup bourbon, divided

3 1/2 cups reduced-sodium chicken broth

1 carrot, chopped

1/4 cup plus 1 teaspoon packed brown sugar, divided Giblet Stock

2 cloves garlic, unpeeled

Corn Bread Stuffing

Salt & freshly ground pepper, to taste

1 1/4 cups water, divided

6-8 whole black peppercorns

1 onion, chopped
