1/4 teaspoon almond extract

8 to 9 large peaches (about 2 3/4 pounds), pitted and sliced about 1/2 inch thick

3/4 cup granulated sugar

1 1/2 tablespoons cornstarch

1/4 teaspoon ground Saigon cinnamon

1 large egg

1 tablespoon water

1 tablespoon turbinado or granulated sugar for garnish
