  • 2 Tbsps unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 cup milk
  • 2 Tbsps dry white wine
  • 1/2 tsp dry mustard
  • 1/2 tsp anchovy paste
  • 3 1/2 ozs goat cheese, crumbled
  • 1 1/2 tsps thyme leaves
  • Salt and freshly ground pepper
  • 2 large eggs, separated, plus 3 large egg whites
  • 1/4 cup grated sharp white cheddar
  • Mixed Greens with Papaya
