1 pound or a little more, swet potato

1/2 cup full fat ricotta

1 medium egg, lightly beaten

1/2 teaspoon sea salt

1 1/4 cup all purpose flour, plus more for dusting

4 teaspoons chopped, toasted pecans

6 tablespoons unsalted butter

1/4 teaspoon orange zest

1 1/2 tablespoon maple syrup

2 tablespoons orange juice

1 tablespoon dark rum (optional)

1/4 teaspoon ground cinnamon
