4 skinless, boneless chicken breast halves, about 6 ounces each

1 cup Blue Cheese Butter Spread, plus 2 tablespoons, recipe follows

2 teaspoons minced shallots

1/2 cup Tawny Port

1 teaspoon lemon juice

6 tablespoons cold unsalted butter, cut into pieces

Ground black pepper

1 teaspoon minced garlic

4 tablespoons unsalted butter, softened

Fresh watercress, rinsed, patted dry and tough stems removed

2 tablespoons minced shallots

2 tablespoons chopped fresh parsley

1/2 cup all-purpose flour

4 ounces blue cheese, softened (about 1 cup)

1 loaf French bread, cut into thin rounds, accompaniment

1/2 cup chopped lightly toasted pecans

1/2 teaspoon Worcestershire sauce


5 teaspoons clarified butter, or vegetable oil

1 teaspoon fresh lemon juice
