Ingredients for 4 servings

1 (14 1/2 ounce) can diced tomatoes , skinned, seeded, and diced or 3 tomatoes , skinned, seeded, and diced

2 tablespoons olive oil

2 minced garlic cloves

1/4 teaspoon cayenne

2 (15 ounce) cans black beans

2-3 serrano peppers or jalapeno peppers, stemmed, seeded, and minced

1 medium zucchini , stemmed, trimmed, and diced

2 tablespoons chili powder

1 red bell pepper , chopped

2-4 portabella mushrooms , stemmed, wiped clean, and cubed

1 tablespoon ground cumin

1 (15 ounce) can tomato sauce

1/4 cup chopped fresh cilantro

2 (15 1/4 ounce) cans sweet corn

1 1/4 teaspoons salt

1 medium yellow onion , diced

1 cup vegetable stock or water
