1/8 to 1/4 ounce dried shiitake mushrooms

1 tablespoon butter

1 tablespoon extra virgin olive oil + more for vegetables

1 medium onion, diced (about 1 cup)

1 large leek, washed well and trimmed, diced (about 1 cup)

5 medium cloves garlic, peeled and thinly sliced (about 1 1/2 tablespoons)

1 medium jalapeno chile, including the seeds and veins, diced (about 2 tablespoons), optional

-- Sea salt, freshly ground black peppercorns, to taste

4 cups chopped assorted vegetables, such as corn, green beans, mushrooms and asparagus

1 cup chopped fresh roma tomatoes, about 2 medium (see Note)

1 cup mixed chopped fresh herbs, preferably oregano and basil

3 large eggs

2 tablespoons Greek-style yogurt
