1.0 tbsp whisky (or use orange juice if you prefer)

finely grated zest 1 lemon

200.0ml hot, strong black tea (use any type)

50.0ml hot black tea

100.0g mixed peel

2.0 tsp caster sugar

3.0 tbsp whisky

700.0g mixed dried fruits

225.0g plain flour

225.0g butter

4 eggs , beaten

3.0 tbsp good-quality orange marmalade , thin or medium shred

1.0 tsp ground mixed spice

1.0 tsp ground cinnamon

100.0g glacé cherries (natural colour)

225.0g golden caster sugar
