2 racks pork spareribs (2 1/2 to 3 pounds each)

1/4 cup packed muscovado or dark brown sugar

3 tablespoons coarse salt

1 tablespoon chili powder

1 tablespoon paprika

1 teaspoon pepper

SPICY MANGO BBQ SAUCE:

1 cup mango chutney, minced if the pieces are large

1 cup ketchup

3/4 cup honey

1/2 cup apple juice or apple cider

1/2 cup dark rum

1/4 cup apple cider vinegar

3-inch fresh ginger, peeled and grated

5 cloves garlic, minced

3 tablespoons tomato paste

2 tablespoons worcestershire sauce

2 tablespoons dijon mustard

1 tablespoon Asian chili-garlic sauce

1 tablespoon soy sauce

1/4 teaspoon pepper
