1 pkg (454 g) medium-firm tofu , drained

1/2 cup crumbled feta cheese

1/2 cup chopped fresh parsley

2 tbsp vegetable oil

1 onion , thinly sliced

2 cloves garlic , minced

1 sweet red pepper , thinly sliced

1/2 tsp salt

1/2 tsp pepper

1 can artichoke hearts , drained and quartered

4 cups quartered mushrooms , (about 12oz/375 g)

1-1/2 cups cherry tomatoes , quartered

1/4 cup pine nuts , toasted

2 cups packed fresh basil

1/3 cup white wine vinegar

1/4 cup extra-virgin olive oil

1 clove garlic , minced

1/4 tsp salt

1/4 tsp pepper
