150.0 g cold beef dripping or lard, broken into pieces

150.0 g salted butter, chilled and diced

200.0 - 240 ml ice-cold water

200.0 g chicken thigh fillets, diced

0.5 onion, diced

1.0 tbsp spicy jerk paste (or 2 tsp Jamaican jerk seasoning powder)
