500.0ml chicken stock

6 medium Cox or Braeburn apples

25.0g butter

1 oven-ready goose (about 4.5kg/10lb)

1¼ kg floury potatoes , such as King Edward, peeled and cut into chunks

150 ml /¼ pint red wine

230.0g jar cranberries or port sauce

2.0 tbsp fresh thyme leaves, stalks reserved

8 leeks , trimmed, chopped into long slices and rinsed, trimmings reserved

finely grated zest of 2 unwaxed lemons

6 plump garlic cloves

parsley and thyme stalks

FOR THE PORT GRAVY

2 x 20.0g packs parsley , leaves chopped, stalks reserved, plus a few sprigs for serving

2 carrots , chopped

1 onion , chopped

leek trimmings, finely sliced

50.0g butter

FOR THE APPLES

50.0g fresh or defrosted cranberries

goose neck and gizzard, roughly chopped

1.0 tbsp vegetable oil or sunflower oil

2.0 tsp golden caster sugar
