4 bone-in, skinless chicken breast halves(about 8 ounces each)

ROASTED VEGETABLES:

4 carrots, cut into 1" pieces

4 parsnips, cut into 1" pieces

2 cups peeled and cubed butternut squash

1 red onion, cut into 1" pieces

1 1/2 cups defatted reduced-sodium chicken broth

COUSCOUS:

2 1/4 cups water
