Ingredients for 6 servings

12.5ml butter

10 ml pepper

20 ml flour

20 ml of tomatoe puree

6 black peppercorns

3 carots, cut into rounds

4 cloves

250 ml red wine

3 stalks of celery chopped

20 ml granulated sugar

ox-tail (about 1.5 kg), washed, wiped and jointed

3 bay leaves

5 ml salt

2 cloves garlic

1 turnip peeled and cubed

250 ml beef stock or cube disolved

2 sprigs thyme

2 large onions, sliced
