1 tbsp unrefined cane sugar

1/2 tsp kosher salt

8 oz (16 tbsp) cold unsalted butter, cut into small pieces

1/2 to 2/3 cup ice water

1 pound (about 2 medium) Golden Delicious, Gala, or Pink Lady apples

1 cup shredded aged Gouda or Cheddar (about 3 oz)

1/3 cup unrefined cane sugar

2 tbsp unbleached all-purpose flour

1 tbsp fresh thyme leaves, finely chopped

2 tsp freshly squeezed lemon juice

1 tsp lemon zest

1/2 tsp pure vanilla extract

1/4 tsp cinnamon

1/4 tsp salt

2 tbsp unsalted butter, at room temperature

2 large eggs, separated

2 tbsp heavy cream or milk, for wash

Turbinado or sanding sugar, for garnish
