4 beef bouillon cubes , crushed

1 cup elbow macaroni

8 ounces tomato sauce

1 bay leaf

1 teaspoon basil

salt and pepper

1 yellow onion , chopped

1 eggplant , diced (don't peel it)

3-4 celery ribs , chopped (it's OK to include the leaves)

2 teaspoons parsley

14 1/2 ounces petite diced tomatoes

3-4 carrots , chopped

2 teaspoons fresh garlic , minced
