1-1/2 oz. (3 Tbs.) unsalted butter, melted

1/8 tsp. table salt

2 Tbs. granulated sugar

Fresh blueberries, for garnish

1 cup superfine sugar

1-1/2 cups heavy cream, chilled

2 cups granulated sugar

1-1/4 cups heavy cream

8 large egg yolks

5 large egg whites, at room temperature (about 3/4 cup)

8 oz. (1 cup) unsalted butter, cut into small pieces and softened
