2 handfuls pea shoots or rocket

TUNA MARINADE

60.0ml soy sauce

MOOLI STRIPS AND MARINADE

8 pieces pickled ginger , torn into smaller pieces

500.0g tuna loin, a long piece about 4cm thick

a handful shiso cress or mustard and cress

vinaigrette to serve

25.0ml sesame oil

2.0 tbsp black or toasted white sesame seeds

1.0 tbsp wholegrain mustard

125.0ml groundnut oil

1 mooli (aka daikon or Japanese radish)

25.0ml balsamic vinegar
