1 tsp olive oil

salt and pepper

1 x lemon or 1 TBLS white wine

2 ears organic corn, shucked and kernels cut off of the cob

1/2 x red onion, diced

1/2 x red bell pepper, diced

juice of 2 limes

1 tsp agave syrup

2 tsp white wine vinegar

1 tsp kosher salt

dash of fresh ground pepper

1/2 tsp mustard seed

1/4 tsp celery seed

pinch of cayenne (optional)

fresh cilantro or basil, for garnish
