Ingredients

12 oz baby spinach

1 cup chopped parsley

1/2 cup chopped chives

8 x fresh cremini mushrooms, cleaned and chopped

8 large eggs

1/2 cup thick Greek-style yogurt

1/4 cup finely chopped walnuts

3/4 tsp salt, preferably kosher salt (more to taste)

Freshly ground pepper to taste

1-2 x garlic cloves (to taste), green stems removed, finely minced

1 tbsp extra virgin olive oil (2 tablespoons if you don’t have a nonstick pan)
