I made these today and they turned out great! A couple words of caution: make sure to use a light hand when glazing the cookies with the lemonade. Just a tiny tiny bit will be enough. I made the mistake of drenching the cookies with the pastry brush and they turned into goo on the cookie sheet. I also refrigerated the dough in between batches and they held their shape. The perfect summer cookie!

I'm not a huge fan of sweet treats, but this cookie was pretty tasty!~ It wasn't super sweet and the fresh lemon zest took the taste buds to a whole new level!

Ingredients for 6 servings

1 6-ounce Can of Frozen Lemonade Concentrate

½ Pound Unsalted Butter (2 sticks) (Softened)

1 Cup Sugar (Plus extra to sprinkle over the cookies)

2 Teaspoon Lemon Zest (Finely Grated)

2 Large Eggs

2½ Cup All-Purpose Flour

1 Teaspoon Baking Soda

1/8 Teaspoon Salt
