2 tablespoons grated fresh ginger

1 cup low-sodium soy sauce

2 cloves garlic smashed

1 bag (1 pound) baby spinach

1 block (14 ounce) extra firm tofu cut into 1/2 inch cubes

1 tablespoon sambal

1/2 bunch scallions sliced into small rounds

1 pint of leftover Chinese restaurant take-out rice (or fresh steamed white rice)

2 tablespoons honey

2 tablespoons toasted (Asian) sesame oil
