8 ounces Gruyere, grated

Salt and freshly ground black pepper

3 ounces mozzarella grated

4 tablespoons all-purpose flour

2 tablespoons honey

1 pound pasta, cooked al dente (elbow macaroni, ziti, or fusilli work well)

8 sprigs fresh thyme leaves

1 tablespoon extra-virgin olive oil

2 tablespoons butter, plus 1 tablespoon (or nonstick spray)
