Ingredients for 2 servings

1 tablespoon extra virgin olive oil

1 large garlic cloves, minced

1/2 cup onion, chopped

1/3 cup sun-dried tomatoes, if packed in oil – drain & chopped

1/4 cup low sodium chicken broth

1/8 cup Kalamata, sliced & pitted

1/4 cup fresh parsley, chopped

4 ounces pasta shells – I used these corn & vegetable shells

1/2 ounce [1/2 cup] goat cheese, crumbled – plus additional for sprinkling over the pasta
