2 tablespoons soy sauce

1/2 teaspoon fish sauce

2 tablespoons blackberry jam or preserves

1 to 2 large cloves garlic, minced

11/2 pounds boneless pork sirloin roast

6 to 8 skewers, 10- to 12-inches long

1 red bell pepper, cleaned and cut into pieces about 1-inch square

1 red onion, peeled and cut into 3/4- to 1-inch pieces

6 to 8 ounces halloumi cheese, cut into 3/4- to 1-inch squares (see Note)

1 small Asian eggplant, cut into 3/4-inch cubes

Extra virgin olive oil

Kosher salt and black pepper to taste
