1 1/2 lb boneless TURKEY THIGH MEAT, cut into 1/2-inch cubes

2 tbsp olive oil, divided use

1 cup Arborio rice other short grain rice

1 cup chopped onion

1 tsp minced garlic

1/2 cup dry white wine

3 cup fat-free, sodium free chicken broth

1 cup Parmesan cheese, freshly grated

2 cup broccoli florets, cooked until crisp and tender

1/2 cup carrots, cut into 2" julienne slices, cooked until crisp and tender

1/2 cup red bell pepper, cut into 2" julienne slices, cooked until crisp and tender

salt and pepper
