1 large crisp apple, such as Fuji or Gala

1 large firm pear, such as Bosc or Bartlett

1 tablespoon fresh lemon juice

1 1/2 sticks (6 ounces) unsalted butter

1/3 cup pine nuts

2 1/2 cups chicken stock or canned low-sodium broth

Salt

1 cup finely chopped mixed dried fruit, such as apricots, dates and figs (4 ounces)

1/2 cup chopped mint

Freshly ground pepper

1 package phyllo dough, thawed if frozen (1 pound)
