4 1/2 cups chicken stock, plus more as needed

1 cup water

8 Tbs. (1 stick) unsalted butter

2 yellow onions, finely chopped

4 garlic cloves, minced

2 cups Carnaroli rice

2 cups grated Parmigiano-Reggiano cheese, plus more for serving
