One other addition: I made a sugar syrup to pour over the apples - 1 cup water, less than 1 cup sugar. Toss in the cores and the skins from the apples and boil for about 10 minutes. Remove from heat, strain out solids. Pour over the apples. Dust the tart with cinnamon and sugar (generously) and bake (tart is not pre-baked because the apples must be cooked along with the tart) until golden.
