6 pounds boneless chicken thighs (buy them boneless!)

4 corn tortillas

3 tablespoons olive oil

2 onions, diced

1 red bell pepper, deribbed and diced

2 tablespoons minced garlic

4 jalapeno chiles, seeded and minced

1 (28-ounce) can tomato puree

4 bay leaves

1 (12-ounce) bottle of beer (not dark)

2 cups chicken stock

1 1/2 tablespoons crushed cumin seed

3 tablespoons dried oregano

2 to 4 tablespoons ground red chile (such as Dixon)

1 to 2 tablespoons paprika

1 tablespoon unsweetened cocoa powder

2 cups cooked pinto beans, homemade or canned (see note)

1 (15-ounce) can white hominy, rinsed and drained

1 tablespoon kosher or sea salt

Chopped red onion for garnish

Minced cilantro leaves for garnish
