1/3 cup cake flour (aka cake & pastry flour), spoon flour into dry-measure cup and level off

1/3 cup cornstarch

1/4 cup Dutch-processed cocoa powder

3 ounces cream cheese or neufchatel, softened

2 cups confectioners sugar

3 ounces bittersweet chocolate, chopped and melted

3+ tablespoons milk

1 teaspoon vanilla extract

3/4 cup chopped hazelnuts

8 ounces almond paste

2 cups icing sugar

3 to 5 tablespoons light corn syrup

Cocoa powder

4 large egg whites

1 cup sugar

24 tablespoons (3 sticks or 1-1/2 cups) unsalted butter, softened

2 tablespoons instant espresso powder or 4 tablespoons instant coffee, finely ground

2 tablespoons vanilla extract

2 ounces bittersweet or semi-sweet chocolate, chopped

confectioners sugar

rosemary sprigs

red hots (aka cinnamon imperials)
