2 tablespoons chopped green onion (include some of the green)

2 teaspoons unsalted butter

3 tablespoons lowfat sour cream or plain yogurt

3 tablespoons lowfat milk

¾ cup (about 3 ounces) light shredded sharp cheddar cheese, divided

½ teaspoon kosher salt

¼ teaspoon freshly ground white or black pepper

2 slices crispy microwaved bacon, crumbled – optional
