1/2 teaspoon pure vanilla extract

1/2 cup (120 ml) canola oil

1/3 cup (58 g) granulated sugar

1/3 cup (80 ml) freshly squeezed lemon juice

1 cup (130 g) confectioners’ sugar, sifted to remove the lumps

2 tablespoons freshly squeezed lemon juice
