-- Juice + 1/2 teaspoon minced zest from 1/2 lemon

-- Juice + 1/2 teaspoon minced zest from 1/2 orange

1/2 teaspoon clover honey

1/2 teaspoon Champagne vinegar

1 1/2 teaspoons minced shallot

-- Pinch kosher salt

1/4 cup extra virgin olive oil

The walnut pesto:

1 small garlic clove

1 cup toasted walnuts

1/2 cup extra virgin olive oil

1 teaspoon clover honey

-- Sherry vinegar to taste

The salad:

1/2 pound arugula

4 to 6 small French butter pears, sliced
