Ingredients for 8 servings

1 onion , chopped

250 (1 cup) ml water

125 ml white wine

1 bouquet garni (or rosemary, thyme, parsley and sage)

1 carrot , peeled and sliced into rings

400 ml chicken stock

Creamy Curry Sauce

chicken stock (from the roast chicken)

30 ml curry powder

crushed black pepper or crushed peppercorn (Don't forget to remove them afterwards!)

1 pinch cayenne pepper

125 ml cream, whipped

6 cups cooked basmati rice (to serve)

1 orange, juice and zest of

15 ml oil

10 ml tomato paste

1 can apricot halves or peach halves in syrup

poultry seasoning

60 ml marmalade

To Serve

3 bay leaves

250 ml mayonnaise

2 medium onions , finely chopped

salt
