9 Ingredients

  • 3 whole boneless chicken breasts with skin (about 2 1/2 lbs),
  • halved
  • 1 1/2 Tbsps olive oil
  • 3 1/2 Tbsps unsalted butter
  • 1 onion, sliced thin
  • 3/4 lb mushrooms, sliced thin
  • 1/2 cup Marsala
  • 1 cup chicken broth
  • 2 Tbsps minced fresh parsley leaves

Preparation

I used mushrooms that I had previously air-dried, and it lent a great meaty taste... Also used Chardonnay instead of Marsala, I think it let the flavor of the mushrooms and onions come through better!

So easy and flavorful. I did tenderize the chicken and dredge it in flour. Will definitely make this again!
