1 2" piece fresh ginger, peeled, sliced into coins

6 cloves garlic, crushed

1/2 cup ghee

2 medium yellow onions, thinly sliced

1/2 tsp. cayenne pepper

1 tbsp. ground coriander

2 tsp. ground cumin

2 tsp. ground turmeric

1 1/2 cups masoor dal (split, hulled pink lentils), rinsed

Kosher salt, to taste

2 tsp. black mustard seeds

1 tsp. cumin seeds

2 Thai green chilies, stemmed and quartered lengthwise
