olive oil, for sauteing

4 cloves garlic, minced

1 can tomato paste

2 tablespoons dried Italian Seasoning mix, crushed between fingertips ( with basil, oregano, thyme, marjoram and rosemary)

28 oz. can crushed tomatoes

1/4 cup water

1 bay leaf

1/2 teaspoon salt (to start and more to taste)

¼ teaspoon black pepper (to start and more to taste)

pinch of sugar if highly acidic

1 1/2 cups all-purpose flour

4 eggs

1/2 teaspoon salt

2 cups milk

3 cups ricotta cheese

1 pound fresh mozzarella, grated

2 tablespoons fresh parsley, grated

1/4 teaspoon nutmeg
