1 yellow bell pepper, cored, seeded and chopped

1/2 cup plus 2 tablespoons olive oil

1/2 cup cornstarch

2 (28-ounce) cans diced tomatoes, with their liquid

1/3 cup rice flour

1 egg, beaten

1/3 cup potato starch

2 cups ricotta cheese

1 tablespoon chopped oregano
