2 tbsp rice vinegar

4 x baby octopus, frozen

2 tbsp caramelized onions

3 tbsp canola oil

1/2 x carrot, shredded

2 tbsp red cabbage, thinly shredded

1 tsp superfine sugar

1 x clove garlic, finely minced

4 x fresh shiitake mushrooms, diced

1 x yellow squash, cut into quarters, lengthwise

3 x mini zucchini, cut into quarters, lengthwis

1 ounce firm tofu

1/2ponzu soy sauce, + extra for serving c ponzu soy sauce, + extra for serving

3 x small toasted nori sheet

1 tsp salt

1/2 x black pepper, freshly ground
