Ingredients

1 turkey carcass, with about 5 or 6 ounces of meat on it

1 to 1 1/2 quarts water

3 cups chicken broth

2 celery stalks, chopped

2 onions, chopped

1 carrot, diced

2 tablespoons chopped parsley

1 bay leaf

3 tablespoons extra virgin olive oil

1 tablespoon flour

1 cup wild rice

2 baking potatoes, peeled and diced

1/2 to 1 ounce dried mushrooms, such as porcini, chanterelles, or a combination

1/2 pound fresh mushrooms, sliced or coarsely chopped

Salt and pepper to taste

1/4 cup Marsala, dry sherry or Madeira
