Ingredients for 6 servings

1 medium carrot , cut into chunks

8 prunes , halved

400.0g can chopped tomatoes

1 fennel bulb , trimmed and cut into chunky batons

250.0ml red wine

3 garlic cloves , chopped

350.0g new potatoes , halved

1 red or yellow pepper , deseeded and cut into chunks

1 cinnamon stick

zest and juice 1 orange

1 large red onion , cut into chunks

couscous and toasted flaked almonds, to serve (optional)

1.0 tsp cumin seeds

400.0g can chickpeas , rinsed and drained

1.0 tsp coriander seeds, crushed

1.0 tsp fennel seeds

4.0 tbsp rapeseed or extra-virgin olive oil
