Ingredients for 16 servings

1 1/2 cups brown and wild rice

2 1/2 cups ricotta cheese (I used whole milk but you can substitute part skim)

8 large eggs (you can use egg substitute if needed)

1/2 teaspoon salt

1/2 teaspoon cracked black pepper

2 tablespoons extra virgin olive oil

4 large cloves garlic, minced

5 whole green onions, sliced

2 1/2 pounds fresh spinach

1 cup Parmesan cheese, grated
