Lime wedges for serving

1/4 cup canned pineapple juice

3 to 4 Tbs. finely chopped lemongrass (remove the outer leaves from 1 or 2 stalks and chop the tender centers)

1/2 cup chopped fresh cilantro; more for garnish

4 tsp. granulated sugar

3 Tbs. chopped fresh mint; more for garnish

2 tsp. grated lime zest

4 pork blade chops, 1-1/4 to 1-1/2 inches thick (3-to 4-lb. total), brined   if you like

1/4 cup soy sauce

2 Tbs. minced fresh ginger

2 Tbs. minced garlic

1/2 cup Asian fish sauce (nam pla or nuoc mam)

2 Tbs. peanut oil
