  • 4 (6 to 8 ozs) striped bass fillets
  • 1 cup thinly sliced vidalia onions, or other sweet yellow onions
  • Freshly ground pepper
  • 1 1/2 lbs yukon gold potatoes, halved
  • 12 small garlic cloves
  • 1/2 lb pancetta, thinly sliced
  • 1 Tbsp finely chopped fresh parsley leaves
  • 2 cups fresh sweet green peas
  • 2 sprigs of fresh rosemary
  • 4 cups of vegetable oil
  • Salt
  • 1 cup flour
