150 g (5 oz) mixed pitted olives, roughly chopped

1 cup mixed fresh herbs (parsley, sage, chives, thyme &/or oregano)

1 cup panko breadcrumbs (Ours contained egg so use fresh breadcrumbs for a vegan version)
