5 ounces mixed spring greens

3/4 lb peeled cooked beets, cut into 1/3-inch cubes (you can cheat and use canned beets if you must)

2 cups walnut halves

1 avocado , cubed

1 fuji apple , cut into 1/3-inch cubes

1 cup manchego cheese , thinly shaved

salt & freshly ground black pepper

1/4 cup fresh lime juice

1 fennel bulb , cored and thinly sliced
